Southwest Chicken & Rice

4 cups brown rice
1 LB chicken breast
½ cup chicken broth 
2 cups salsa
1 cup low fat cheese
½ packet of your favorite taco seasoning

To make Southwest Chicken & Rice: First, prepare brown rice, if uncooked, this will take about 35-45 minutes.

While rice is cooking, cut chicken into small pieces. Heat large pan and add chicken.  Add packet of taco seasoning to chicken when chicken is partially cooked through. 

Next, add salsa & chicken broth, let simmer until the consistency is thick.  Combine rice and chicken and top with cheese. Enjoy!
